OK Folk going to really stir the pot on this one.

Not sure how many of you know. hehe I was a chef for close to 20 years.

So here is the Question.

What is your favorite Cornbread recipe?
What do you like to put on and or in your cornbread?

I will start.
For the recipe
1 and 1/4 cup all purpose flour
3/4 cup Corn Meal
1/4 cup sugar
2 teaspoons baking powder
1/2 teaspoon salt (optional)
1 cup milk
1/4 cup vegetable oil
2 Eggs beaten

Heat oven to 400 degrees F.
grease 8in or 9 in pie tin.
Combine ingredients together pour into pie tin.
Bake 20 to 25 minutes until light golden brown and a wooden toothpick inserted in the center comes out clean.

Best served warm.



Now for on it I like just plain old butter and Maple syrup.
Sometimes I will throw in Jalopeno Peppers. hehe

Now the basic recipe you can also.

Put in muffing tins.

for a nice variation add a 12 ounce ca (drained) of whole kernel corn with sweet peppers to batter.

or

prepare as first recipe then before final mixing you
take 1 cup boiling water pour over 1/4 cup cracked wheat or bulgur. let stand 5 minutes then drain. add 1/2 cup quick rolled oats to flour mixture and add cracked wheat or bulgur mixture to eggs and then mix everything together. Fold in 1/4 cup chopped peacans.

You can also add things like cheese , green chilis, heck almost anything you like.

If you've never done so.. break the bread into chunks and toss it in your glass of milk, then eat it w/ a spoon.

You may get a couple funny looks..
but, Mmmm.. Mmmm. Good stuff.
